    2) I have installed stuff on my 640gb hdd like mp3,video and sofwares for a space of 250gb. and to make a backup disk, how big the capacity of hardisk, will i need?
3)assuming all files were transfer to new HDD, can i uninstalled all vaio sonywares in the control panel, unintstall programs?, Updates in the sony sites i downloaded. will this updates can be installed w/out the sony vaio update software?

Make the restore DVD's before swapping, and yes, they will restore the OEM image to whatever drive you have in there, if that is the Restore Image you want re-installed. I recommend going fresh without all the bloatware or un-needed utilities. The XT requires no extra software to do it's thing, so you should treat it as it were any other notebook drive.

So you have about 250GB of stuff already on the HDD? Here, I would recommend you getting an external enclosure for the OEM 640GB HDD that you are taking out, then when you get the new Seagate XT in place, you could just plug in the external and move your files back over, or just use it as your backup external.

Like I said above, when you're installing the new drive, just start fresh with a squeeky clean install of Windows 7.
