If I leave my computer in sleep mode overnight, will it still download and install the automatic update and will it still defrag in the middle of night?
Probably not though...
What I REALLY want to be able to do, is to leave the computer is some sort of suspend mode overnight, yet still allow it to do stuff that I don't want to take time with during the day - like update and defraging.
Any ideas?

Start the defrag before you go to bed and have the power settings set so that the comp will go to sleep after x minutes. Basically, the computer will go to sleep x minutes after the defrag is done.

are you using vista?
vista's build-in defrager allows you to set a defrag schedule,
if you are using xp, there are defrag programs with schedule functions, search around the forum and also Calvin's sticky.
in vista, you can also set a schedule for windows to check for updates, forgot about xp's windows update -

But yeah... sleep but wake for scheduled tasks... I don't know.
I'll add though that running defrag every week is really overkill... even if it ends up running just once every month or two, that's fine. And eventually it'll download updates and reboot even without you doing anything. But still, I wish I knew how to do what you're asking about. -
you may leave the computer on, and let it sleep on its own after update/defrag.
example, say, if you want to go to bed at 12am,
then set update and defrag to start at 1am,
leave your machine on and go to bed,
it should go to sleep mode after all tasks are done.
