Might be a silly question, but when I change the resolution (from 1024x768 to 1280x1024) on my Acer 3201XCI laptop it doesn't fit the screen! Is this normal? I have to drag the mouse along the edges to view the rest of hte desktop. I have noticed people having higher resolutions on their laptops than what must be the default - how do they do this?

It may not support it maybe, as the resolution is not its 'native' resolution...
Also, try updating the drivers -
1280 x 1024 doesn't fit on a standard notebook screen. you will have to scroll.
the standard resolutions for a 4:3 screen are...
1024x768 - xga
1400x1050 - sxga
1600x1200 - uxga
for 16:10, they are...
1280x768 or 800 - wxga
1680x1050 - wsxga
1920x1200 - wuxga
it is, by definition, impossible to have a higher-than-default resolution on a notebook screen. the default resolution is the "native" resolution aka "max" resolution that an LCD can handle.
