So decided to test out SongBird, since the idea of a Mozilla product with music and a browser made sense to me. And I love it for that; easy access to music library and changing songs while surfing the web. I do own an iPod, and also read that Songbird can sync music. The latest add-on can be found here. However, when I try adding music I get a transcoding error each time. Has anyone figured out a fix or a workaround using Songbird to sync music?

What type of iPod are you using? As far as I'm aware, Songbird can't sync with iPod Touches, only regular iPods. If you have an iPod Touch, you'll have to use MediaMonkey to sync your music (or iTunes, but I'm guessing that you don't want to use iTunes given the Songbird interest).
Beyond that I can't help; I've never used an iPod Non-Touch, and thus have never tried to use Songbird to sync an iPod. -
Using a regular iPod. Don't know what generation. The first video ipod, I think. Anyways, yeah, I despise iTunes, and currently use Winamp to sync my ipod and AIMP2 as my music player, but would like to just use 1 player for everything and decided on SongBird. Checked out MediaMonkey, but I felt Songbird was a better decision, and I do like it so far, minus the no iPod syncing.

"Transcoding" implies that it's trying to change the format/encoding of your music... which it shouldn't need to do if you sync files that your ipod supports. What format/bitrate are your music files?

All .mp3. It's not a problem with my music files, it's a problem with the add-on. I read a lot of people who have the exact same problem as me.
Anyone Using SongBird?
