The Linked Toolbar used to do this; id get an email, highlight the sender's signature, press "grab" and it put all of the info into the correct fields, and give me the option of saving that person as a new contact.
That add-in though keeps crashing my system.
Anything else like that on the market?

Do you mean the Linkeldn toolbar?
I have never used Linkeldn tool bar but I think Plaxo might be an alternative.

I did find this ContactGenie - Microsoft Outlook Contact Import/Export tools but dont know if it will do what your wanting to. -
How do people copy signature information into Outlook?
