I'm a beginner and I want to learn how to use Illustrator. Now, I know there are many tutorials for Photoshop, but I haven't seen much when it comes to Illustrator.

Illustrator is basically for VECTOR artwork/design.
Usually, PEN TOOL will be major in use for Illustrator.
I don't have tutorial of Illustrator and I don't like Illustrator. However, I learned it before(know basics).
Photoshop is way better since I like painting instead of vector/graphic designing.
So, you should practice how to use PEN TOOL to create vector drawing and so on. For example: Logo, Icons, Typeface(font) and many more.
    Try youtube for tutorial.

I find it easier to retain what you learn by working with the tools directly than watching or reading about the tools. Just find a tutorial there of something you want to make -- Illustrator is not that difficult to learn, it's just daunting at first if you are used to Photoshop because it looks like it, yet it is a totally new program and you will have to understand the logic behind vector illustrations and design. Following a tutorial will open you up to different techniques that'll make things easier for you.

After going through a few tutorials you should feel more comfortable with it.
