I was wondering if there is a way within Windows Vista to set the volume properties so that plugging in a pair of headphones will cause the volume to automatically adjust to a pre-determined setting? I tend to only need about 1/3 the volume on the slider bar with headphones as I do when I'm using my laptop's speakers, so it seems like there should be a way to detect the presence of headphones and adjust accordingly without me having to do it manually...

Have you checked and see if the audio software that comes with your audio driver offering the options? Still, I have not yet seen any apps that can automatically detect the presence of the headset, unless it is over Bluetooth (wireless).

Maybe not, but DRIVERS do. Most of the recent SONY laptops do not have the old headphone/speaker hardware switch built into the headphone jack. Instead, they have a sensor that can tell when headphones are plugged in and the software (driver) reroutes the sound to or from the headphone jack. So it is feasible that an application or even the driver MIGHT be able to keep track of separate levels for speaker versus headphone.
I recently switched from using the device specific Sigmatel drivers for my Vaoi FZ190 and am using the generic Vista drivers. They give me more volume and they do EXACTLY what the OP wanted. They remember a different volume for speaker and headphone. The only trouble is they don't always swithc between headphone and speaker or vice versa IF I have some audio app open. I sometimes have to close the app, plug in my headphones, and then restart the app. I have gotten use to it and make sure I have the headphones plugged or unplugged BEFORE starting the audio app.

Just remember the thing about the "quirkiness" of the switching between headphones and speakers. It can be VERY infuriating at times, trust me.
