    The Windows 7 Enterprise x64 installer if I have an Ultimate key?

    first off if you have the ultimate key why in the world are you not installing ultimate. If you're talking about the beta/rc ultimate keys and then the enterprise rtm. then no. The rtms have their own special legion of keys. RC/BETA shared the same key structure. If you really do have an ultimate rtm key go get ultimate and trim down some things.

    win7 no longer has the one-disc-rule-all scenario. in order to do so, you need to modify a file inside the cd and burn it again in order to enable the one-disc-rule-all scenario again.

    of course that's contingent on you having a valid win7 rtm ultimate key.
