I also install Java only when I really need it. As soon as I don't need it anymore, I uninstall it.
Well, most of the time I share the thought - the newer, the better.
But sometimes it doesn't work that way.
My uni has a website where students needed to do e-homework. But it didn't really work correctly with the latest version.
For what kind of task you'll be needing a Java? Which version it requires? Will it work properly work other version? Do you need it at all? -
so I tend to install it just in-case -
It's a security risk. I'd advise you to not install it until you really need it.

there's an increased chance of an exploit being used against you. but surely, the risk increase is not big enough to care. i just never liked java. the only time i needed it was for minecraft. other than that, i haven't used it in that millenium, i guess. not for file uploads for sure.

Java 0day exploits happen at least once a month. Patching isn't the best way to deal with it though I suggest you check often. Your AVs might pick up the payload if that's the way the exploit works and if you're lucky enough to have updated just then with the latest definitions.
The issue right now is that Oracle's Java 7 isn't what they push - it's still considered in development. I personally think it's fine to use unless you are a developer. But if you are you can figure taht much out for yourself.
