I suppose there is always MS exchange...

I know my university used to use first class - I hated it - so unless you find something very positive about it, stay away I'd say.

Now my university switched to google - this could be interesting, but I wouldn't trust them with confidential e-mails.

Another option should be via Linux...

But you may want to tell people here how you want to run it.
Dedicated server, off site, laptop in a cupboard? (enough for a small server, needs 64Bit for MS exchange though)

Mind you, this is a laptop forum, so other places may offer better advice.

Its going to be a dedicated server hosted from a cable modem 5mb down 1mb up. Right now im testing on an old amd64 laptop, but plan on purchasing an amd based quad core/4gb/320gb hdd raid-1

Im familiar with windows, but ive been looking into ubuntu. Ive never messed with anything linux before but im not opposed to giving it a try. One of my concerns was with how well it would play with windows in a local networking environment? like is setting up workgroups and file sharing easy?

    That I can't tell you - sorry :(
You may be better off asking this in a dedicated Linux forum.
