Clicking the Windows key + a number opens different programs. I didn't even know this was possible until recently. How can I assign the programs to each number? Thanks.

The "Windows key + a number" uses the shortcuts in the launchpad. The first shortcut is 1, the second is 2 and so on. Changing the order will change the numbers.

Pardon my ignorance, but which one's the launchpad? Do you mean the left column just above the Windows orb? Because the programs opened with Win + # are not on that section.

Launchpad, or to be precise - Quick Launch.
