I am going to order a Sager NP5790. I am going to get XP. I know that XP will not function if I upgrade to 4GB. So my question is will it work with 3GB or will I have to stick with 2GB?

It'll still function. I believe the limit is 3gb RAM.

4GB can be installed, but only about 3.2GB will be useable.
3GB are fully useable, but you'll have to use 1+2GB, which will not work in Dual Channel most likely. So you'll have little performance decrease. I think I'd stick to 2GB as you hardly ever even need these, unless you've got very Ram-demanding programms.

There are countless threads in these forums about the "dual channel vs more ram" topic

More ram outweighs dual channel. Dual channel only offers like 5% performance increase, so go with the 3GB.
