Right now this is gonna be a XP installation with minimal stuff (no games, no real large programs).
But when Windows 7 beta comes out officially, how much space should I leave? Could anyone who is using Windows 7 give me something the minimum amount of GB I should have as a partition?

You could do 4-10 GB on your XP installation, and leave the rest for Windows 7 since you wont be using XP for much.

Just googling it comes up the same thing, pretty much the same as vista, so if that is the case, this is what Home Premium, Business and Ultimate require:
40 GB hard drive with at least 15 GB of available space. -
Yeah I put a 25GB partition for now.
