I just copy the iTunes music folder onto an external HDD but when I add the songs to iTunes, there is no album art. How do I back-up the album art?

You need to copy the entire folder from your "my music" dir this also contains the folder that contains the album artwork.

    Here is a thorough guide.

You can restore all artwork direct through iTunes if it isn't possible to get the directories.

When you open up iTunes, in the top Menu go to "Advanced", scroll down to "Get Album Artwork" and click; it will search and fetch the artwork for the albums it has available.
