How can I see if the available wi-fi networks are either WEP or WPA/WPA2 secured? When I go to select from the wireless networks, it only shows that they are protected; but it doesn't say which type of security it is.

If you hover the mouse pointer over the wireless network name, without clicking it, for a second or so, some info will pop up, it tells you Name, Signal Strength, Security Type, Radio Type and SSID.

You can also use the software called "inSSIDer", that will give you in real-time, all the connections within your range, with all the info displayed in a chart, including the type of security encryption.
I find that inSSIDer finds a lot more signals that regular Windows WIFI functions.
