Is it possible to install 2 copies of iTunes on 1 user account on Windows 7? I want one to host all albums, while others to host all mixtapes.

Well, that answers my question of WHY you would want 2 copies of iTunes. For the record, iTunes has poor playback quality in comparison to Media Monkey and Winamp.
Rather than 2 copies of iTunes, you should look into making multiple libraries within iTunes:

I never used that aspect of my iPod, and am now actively leaving Apple products behind, so I can't answer that question for you.

It's alright, I guess I'll just keep my full albums on my iPod and my mixtapes/random songs on the separate library. Thanks for your help though, +rep!

Had two IPOD Touch set up on same system - depends on what you tell them to sync with - the iTunes will recognize each IPOD as a unique item.
So for one had my full music library for the other had a small portion. same for some photos etc. Shared the apps across both, etc.
Don't do it anymore tho - travel with another system so moved one to another travel system and now sync each to it's own computer.
