I know sleep uses power, but hibernate doesn't, so i'm wondering if it's possible to swap a battery while hibernating?

I would say yes because standby stores data in memory and hibernate stores the contents of ram on your disk drive. The only issue is if you turn off all power you could encounter a system recovered from an error message.

Hibernate doesn't require any power at all, so you can swap batteries while the laptop is in this state.

Yup, I have done so already. Had no problems. Hibernate does shut the PC down completely but saves the last state of the OS.
