I'd like to add permanent icons to a few archives, but I can't figure out if it's possible.

Not really. Icons are for executable files, Windows doesn't parse a .zip for an icon in order to display it. You may be able to create shortcuts to your .zip files and then change the icons on those, because .lnk files are classified as executable, but you won't really be able to change the icon of a standard zip without changing the icon for ALL zips.

Well, there is the 7-Zip Theme changer if you like a facelift to the 7-Zip UI and icons.
7-Zip Theme Manager
Is there a way to embed an icon in 7zip files?
