In the process of doing a clean install on my old gateway laptop with the supplied windows disc, I accidentally deleted all available partitions (thought I'd create a new one, but the "new" button is grayed out...)

So right now I'm stuck, my screen looks like this right now except the window listing the available partitions is empty...

What should I do in this case to reinstall?

Nothing in particular, just start over. If Windows insists on showing you the screen in your screenshot, then click on "Drive options (advanced)", and create your partition there.

Tried that... when I get to the screen asking me which partition to install windows to, I still get a blank list...

Edit: found this video that shows the problem I'm having, although I'm not too exactly sure what he's doing.

Something is fishy here. If there's no partitions on the drive, you shouldn't even have to go there.
After you have created your partition, can you format it? What OS did you have on that machine before?

I had factory vista 64 installed on it before, when I went for the clean install, I (stupidly) deleted the existing partitions believing I could create a new one. However, I can't and now I'm stuck with no partitions to install to. It's a single hard drive that came originally with the computer.

Pretty much same issue as this video here:

Apparently I need SATA drivers... it's not on the gateway drivers website, how do I go about finding these?

Alright, so that means you need a custom driver disk. Can't help with that, but googling your notebook model should give you what you need; or head over to the hardware or Gateway forum for help with this.
