It now says I have two instances of Windows XP MCE when I start up-- of course I only have one because I completely formatted the drive and did a clean install.

Any advice on how to make it remove the option for the 2nd non-existant instance of Windows?

    Thanks.

Right-click "My Computer", Advanced, Start-up & Recovery Options. De-select "Show list of available Operating systems for...".

If you're feeling adventurous, you can use the advanced option there to open the hidden Boot.ini file and remove the line for the non-existant copy of the OS, but make sure you're deleting the inactive one, or you could make your PC unbootable.
