Is it possible to change the behavior of Office 2007 to save in old formats(.doc, .xls) by default? A lot of people are still using the old versions of Office.

Another irritating thing is when creating a new document by left clicking on the desktop the only option is .xlsx and .docx.

Yes to the first question! That's the first thing I did for a while until I was sure that people I sent files to installed the compatibility pack for Office XP/2003.

Open Microsoft Word, click the Office button, then choose Word options at the bottom.

When that window opens, click on the Save tab on the left, then in the "Save Files In This Format" dropdown, choose "Word 97-2003" document.

Click OK to close the window.

Unfortunately, you'll have to repeat this process for each Office program you use.

    Good Luck,
    Ricky :)

booboo12 got it. On a similar vein, the other day when editing a document someone sent me in the .docx format, Word complained when I tried to save it that it wasn't in 8 dot 3 format. When I switched the save mode to .doc (my default), it allowed me to use the standard format. Any ideas on why that may have been? Requiring 8 dot 3 is pretty useless when .docx has 4 letters, so I'm thinking it must have been a bug, especially since it allowed me to save .doc in Long Format - wasn't Windows being weird.
