It remembers some, but not all.
Also, ill put in the name, it wont recognize it so I will "check names"-after which, it will remember that name for about a day.

    Any ideas?

did you delete the .nk2 file and let Outlook rebuild it as you go along? It sounds to me like a bad .nk2 file.

If I delete the file, wont it lose all the addresses that it does currently remember?
How would I go about deleting it and rebuilding a new one?

This, unfortunately, is Outlook's default behavior. It only remembers an address after you actually send an email to it. It's pretty annoying. I think there is some way to have it "learn" all the addresses that are saved so you don't have to click on the "To" button when you first want to use their address, but I don't remember what it is. I'll see if I can find it.

If you have addresses in your contacts, you can hit control + k when beginning to type in their address/alias to have it autocomplete.
Unfortunately, MS doesn't offer a tool to edit the .nk2 file. You delete it, you lose all that is cached, and it rebuilds as you go along again.
