Just wondering if there's any software that would allow you to take notes in a format similar to Word but also allow you to use your touch screen to draw simplish diagrams when needed using a pen on a touch screen ultrabook?

You can do this in Word itself in at least 2010 and newer. You'll need to manually pin the Ink toolbar to the ribbon and you can use the pen to draw with touch. I do strongly recommend that you use a machine with an active digitizer as it will provide a far better drawing experience, but for the occasional diagram, it should suffice. (With a pen, the Ink toolbar will automatically pop up.)
For pure handwritten notes and diagrams, OneNote is definitely the way to go.
