Actually, no you can't OCR edit text in just any scanned document in Acrobat, unless you have one of the newer Acrobat editions that have OCR scan capability for a previously scanned document.

If you're looking for a good program for OCR scanning and editing, the best I've used in the past is OmniPage, published by Nuance, the same company that publishes Dragon Naturally Speaking. OmniPage's OCR ability is excellent, even with poor scans or damage originals.

The user initiates the scan from within OmniPage, and after OCR is initially performed, the document is presented to the user in Edit mode. The user can then go through the document and compare the scanned text with the original and make changes where necessary. Like any wordprocessor would, it also notes misspells and other problems upfront for user to fix.

There are 2 versions with differing capabilities, the Pro version and Standard. While the Standard version of OmniPage is about $150, the Pro version is $499 unless you have a previous version to upgrade from.
