This question has been asked before.
It really depends - if you wanted to you could relace Word completely by TeX or MikTeX - just needs some effort.
It'll also depend on what you do - not everybod needs Photoshop CS4 or Dreamweaver CS4 for example. -

Many of the ones that I use, are located in this simply awesome thread here
Snipping Tool is fun, and I really like Photobucket!
As with some of what you already have mentioned above!

For what I'm going to be doing, I picked up the Adobe Creative Suite Production Premium from my university book store. There are a couple of programs included that I don't think I'll need (Illustrator and OnLocation come to mind) so I'm not going to install all of them right away. Otherwise, there are a handful that I'm trying to learn my way around. I'm going to try to avoid loading my Vaio Z with unnecessary applications, but here are twenty that I'll definitely end up having.

I can toss all of this onto a 'fresh' system load in about an hour.
Considering the memory and perfomance hit of Sidebar compared to things like SideSlide and RocketDock, I will probably dump the native Windows gadgets for one of those two solutions. I also like that both SideSlide and RocketDock have a slide-in/slide-out capability (preserving on-screen real estate) that Sidebar and gadgets do not.
My Vista and Win7 machines have roughly the same software loads. In my particular mix of apps/utilities, I've found nothing that runs on Vista that will not also run on Win7. -
