Unsurprisingly, none of the video transcoding programs I've tried so far have been able to properly convert a Hi10P source video into something watchable on iOS. Has anybody had any luck?

Do you start with a high a quality video source then convert it to a lesser format that you are not happy with? What is the purpose of the conversion? What do you mean when you imply watchable? -
The OP is probably referring to the fansubbing community's switch to 10 bit encodes. Currently, 10 bit is only supported by open source codecs. No commercial program as of yet has 10 bit support. You will have to use something like AviSynth and create your own filter/muxer using open source codecs and logic.
