Hi,
My new laptop has the Montevina platform in it and I'm not sure if I'll be getting the most out of my laptop using XP (64bit).
Between Vista (64bit) and XP Pro (64bit), which would you recommend me to install and why?

Vista 64-bit because since XP was not developed natively for 64-bit, XP 64-bit has poor driver support and stability issues. You shouldn't have any problems running Vista 64-bit.

XP 64 bit is not widely supported, but Vista is. If you have all your drivers, you should be fine with XP 64...but still.
XP 64 is actually based on Server 2003 if I remember correctly, which was developed with 64bit in mind. -
So I wouldn't slow down with Vista? I really can't stand the security measures Vista takes for every action you make, I guess I'll have to heavily strip Vista of it's features and things I find useless to boost performance.

All you need to do is disable UAC.
Go with Vista 64-bit for sure. -
For the record, XP64 is *not* XP32 up-ported to 64-bit. It's Windows Server 2003 64-bit without the server stuff. Different kernel, slightly different architecture.
Also, driver support for XP64 is **NOT** "poor". As far as stability, as I said, it's Server 2003. Server 2003 is brutally stable, and 64-bit Server 2003 is very popular in the server market for several reasons, including stability. -
It's different kernel and architecture like you said, just because Server 2003 is very stable, this doesn't necessarily mean XP x64 is as stable.

My vote goes for Vista 64 as well. SP1 renewed my faith in it and is definitely my OS of choice now.

Okay cool most recommend Vista so I will give it a chance.
I'll tell you what though, expect me to strip its cute bubbly interface and turn it as simple as I can! -
All you really need to do is follow the Vista Tweaks guide and Vista will be good to go.
