Any Latest Build Would be Best ;)

Get Win 7 Home Premium if not into domain computing or else Win 7Pro is best all rounder

Although Pro comes with a nice backup utility not included with Home Premium, unless you want to buy your own third party backup software.

The only version that will work past March 2010 is the RTM release (build 7100??) with a valid license key.

There is some news that indicates that Win7 SP1 will be out before then though.

I like Pro, it supports Virtual pc so i can plot to my Designjet plotter from xp. I'm sure there are other ways to emulate xp, but this was just convenient for me.

The main advantage of Professional from a typical end user perspective (i.e, people who don't need support for domain computing, 2 physical CPUs and 129GB RAM) is the XP Mode. However, this is simply virtualisation, and isn't really suitable for gamers (VirtualBox offers limited 3D acceleration, and might be a better option for those who really want to go the virtualisation route).

Otherwise, Home Premium is the one to go for.
