You can safely delete all but the update 7 one. Java updates = install new version but leave old alone. After two years you'll have like ten Java versions on your hd. Just delete all but update 7

I just cannot understand why they leave the old alone.

they are thinking ... (extract from http://java.com/en/download/faq/5000070400.xml )
"You can keep older versions of the JRE installed, in case you have an applet/application that still depends upon a previous version!"
and that is true in development world; migration to newer level of runtime takes some time internally.

    cheers ...

Like rubenvb stated, you can safely uninstall the previous version. I always uninstall the previous version before installing the newer version, I only keep the most updated version in my machines.

Yes it's true. When you install every version, you will notice that each version will be installed in a separated folder (i.e. C:\Program Files\Java\jre1.6.0_07), it doesn't overwrite any files from the previous installation, it's a waste of space.

After all these years, I never had any problem with older applets/applications having only the newest version in my machines. Although, maybe there are still some applets/applications out there that require the older versions, I just haven't encountered any yet.
