Home's cheaper and hasn't got as many features. Is a bit more stable.

Home is fine for the average person for word processing e.t.c. Business is often needed for more in depth tasks. Ultimate is the best although I think it still has quite a few bugs in (it) at the moment.

Home Basic/Premium are more stable  In what ways?? The only difference between premium and Business is that Business lacks Media center, parental controls & Windows Media apps(DVD burner, movie maker etc). Business includes fullremote desktop and has the ability to join a domain plus couple of other features. I dont see how these would make Business any less stable than Home versions. Infact stability wise all Vista versions should be the same since the only difference between them is the addition/deletion of non essential features.

    - media center

    - dvd maker

are there any open-source or freeware programs out there which performs the same function?

One MAJOR difference (if you need it) is the ability to join a domain or serve Remote Desktop connections. There are a host of other security features that business users require. Check any one of those links that were posted, and here's one more: http://www.microsoft.com/windows/products/windowsvista/editions/choose.mspx

Yes, there are freeware programs that can work as Media Center, and possibly a few that can enable DVD creation.

Media Portal is the only one I've ever used, but I know for a fact there are some others. Check the free software forum. Most of that stuff will run in Vista as well as XP, if not it will say so on the product's site.

DVD creation and movie maker are the same way. I don't know any names off hand, but you can check the free software thread. There's a huge list on the last (or 2nd to last) page.
