Its quite annoying that after you finish a sentence and press enter, it jumps a whole line.
How do I set the default to 0?

Do you press enter on every sentance? That's usually only done at the end of a paragraph...

Its from the old habit in Word pre 2007 that you try to break a line manually via "Enter".
That's the problem here.
It takes time to get used to only use "Enter" for new paragraphs. -

To delete that extra space between paragraphs, go to any MS Word page that uses the Normal template, and open the Ribbon: Select: Home, Styles, and right-click on Normal. This will open the Normal template’s settings screens. Select: Modify, to open the "Modify Style" page where you can change the font size, style, and similar types of settings.
To change the spacing between the paragraphs, at the very bottom, click on Format, and select Paragraph. Go into the "Paragraph" options, and set spacing in the two boxes so that there is 0 pt spacing before and after paragraph. Also, most importantly, check the box that says: "Don't add space between paragraphs of the same style."
To make your changes the DEFAULT setting for all Normal Template docs, be sure to go to bottom of the main Modify Style page to check: APPLY TO ALL DOCUMENTS. -
Yup, I use a custom NORMAL with my font of choice et cetera.
