    Hi
We have four laptops, one running Win7, two running Vista and one XP.
Three of the four are legit OS's while the fourth is used purley as a media server which rarely connects to the Internet but has a slightly-less-than-legit copy of Win7 on it.

I have found the following Win7 Upgrade Family pack which could be perfect for my needs: Microsoft Windows 7 Home Premium Upgrade Family Pack for XP or Vista users, 3 User Licence (PC DVD) *(3 copies per customer limit): Amazon.co.uk: Software

However, I wondered, if wipe the fourth machine and install a copy of XP or Vista on it (so that it would be a proper 'upgrade'), do you think the legit copy of Win7 would indeed 'upgrade' this system from a les-than-legit OS install?

    Many thanks

You can use upgrade license/disc to do clean install too. I've done that couple times, used method #2 as mentioned in the following link:

Paul Thurrott's SuperSite for Windows: Clean Install Windows 7 with Upgrade Media

That way you save the trouble of installing old OS first.
