I have just reinstalled Windows 7 Pro on a couple of machines and when I go to the update program, it usually shows 45 updates but sometimes it would show 44 updates (even on the same machine and a fresh install of windows). Should I be worried that I am missing updates or will they simply show up later down the road? Is there a resource that I can check to make sure I have all the necessary updates?

After installing updates, refresh the updater. Some updates appear only after others have been installed (at least it was like that on XP).

Thanks for the reassurance

I suppose there could be 40+ updates to Win7, it's been more than a year since RTM.
It would help to know what updates you are seeing. Depending on what edition of Win7 you have installed you could be seeing all of the multi-lingual/localization updates on top of the usual ones.
I've got a huge handful of those localization updates 'hidden' within MU. -
It would be the important updates part of Windows 7 X64 Professional. After a fresh install, I would go right in the update manager. Sometimes it shows up as 44 total, sometimes 45. There are too many to list, but the missing one is usually checked initially. This happens on the same machine, but I guess it will get done after a service pack at the latest...
