I really want to change the start text of my Win 8:

But every time I reboot Windows replaces the modified File with the original. Is there any other way?

Take ownership of the file and remove access to system only allowing your user access.

This may seem redundant, but can you do this under a different Windows account? If so, just migrate your data to the new account using Windows Explorer afterwards.
Also, the application used here to modify the strings may not be doing it's job correctly. You can probably perform the same action without it, but it may require you to go through the registry or use a more technical method. -
Slight tangent, but why do you want to change the word "Start" in the top left to something else? What's the benefit?

You are not the first to ask. I like customizing my Windows to the max because I want it to be as unique as possible. I was thinking of replaying it with "ThinkPad" instead.
If I knew how I'd have no problems editing the registry. -

I kind of doubt this would be a fix for your encounter, but it only takes a minute to make a new account, log out, log in to new account, and test it. -

Replacing the File under a different account didn't help.
Maybe Win 8 is still to new. I should give it a bit of time, then all of those 3rd party customization tools should start appearing. -

There are quite a few already; not sure how customizable though. You can find a thread or two for shell replacement/UI skinning programs, such as StarDock and such though here on NBR.
