How are you supposed to change the hostname of your workstation?

Just in My Computer | Properties?

Or are you suppose to use sysprep or ghostwalk etc. what do they exactly do?

Yes, that is all. If you're on a Windows Domain, make sure you have the rights to change the name on the Domain. If not, or it's just a Workgroup, there's no problem.
