i have a big mp3 collection. i've been using vlc or windows media player to play music. its hard to keep track of what songs/albums i've listened to. is there a software that can keep track of this?
are there any other nice features that a particular player has?

Personally I love foobar2000's metadata managing and its highly customizable organizational features. The bulk renaming, bulk properties editor, etc all make it a very powerful tool for managing large amounts of music. Plus, with few addons, it's extremely lightweight and won't lag with tons of music open. You'll probably have to install an extension for it if you want to keep track of number of times played though.

WinAmp has a really good library system. I keep all my music in one or two big folders (and a bunch of smaller ones) and WinAmp has no problem keeping track of it. It also keeps play counts for 'recently played', 'never played', 'recently added' and a whole slew of other ways to organize music. All built in.

I'm a huge fan of WinAmp, and I loved using it to sync my old iPod Classic. Unfortunately, the iPod Touch 64GB I got for Christmas doesn't work with it (something to do with Apple locking down the ability for the hard drive to be read by non-Apple software), so I've been forced to install iTunes for that. So, if you have a media player that's not an iPod Touch, you should be able to sync with WinAmp.

Yeah, I've been doing some digging, and it looks like you can kind of get it to work with WinAmp, but you have to install iTunes first anyway, and some stuff doesn't work, like transferring play counts, album art, etc.
It allegedly has something to do with the fact that Apple has locked out the "disk mode" feature that was present on all the previous iPod iterations, and was vital to WinAmp's iPod access. -

There's a beta for Mediamonkey that will sync with the current version of iTunes + Touch. The release version may cause crashing with the latest iTunes.
I still use j.River Media Center for it's power, but given their (ironically Apple-fanboi type) attitude of 'blame the other guy' for not offering iPod support, I'm rooting for Mediamonkey to get some of the nicer features of j.River. -
I like my JRiver Media Center. Costs a few $$ but is worth every cent to me.

If you liked WinAmp I strongly suggest you try Aimp2 player which is a lot like WinAmp, but for me alot easier/more intuitive and overall just better. But then again it's all about taste

I recently moved from iTunes to Songbird and have yet to regret a single moment of it.

I would agree with Songbird. Plus, its mozilla based so there is chance for a lot of nice extensions for it. I know they have an ipod extension, but not sure if it works with the iPod Touch. However, the latest version does work with my HTC Eris(Hero) without a hitch.
