I've got a pretty big music collection that's all pretty neatly organized by subfolder, and I want to set a standard set of information columns for every subfolder (including columns not included in the usual templates [particularly bitrate]). Is there any way to customize the templates so that I can change the visible columns for all the folders?

Go to the central folder of your music collection. Right click on any of the column headers, and you'll see a checklist of what you want included. Check which columns you want.

Once you have it set up how you want, right click anywhere inside the main explorer window, and click "Customize this folder". Make sure the folder is of type "Music Details", and put a check next to "Also apply this template to all subfolders". Hit Apply, and now all of your music folders will follow your custom format.
