If you want simple and easy to use: CPUID - System & hardware benchmark, monitoring, reporting

If you want something that does graphs and logs and everything else under the sun, there's Rivatuner if you know how to configure it, Realtemp... and some others I can't remember the name of s:

My personal favorite is HWinfo32. It shows all the temps in the laptop, displays Max, Min and current temps.

If you just want a simple CPU temperature monitoring utility that stays in your system tray, CoreTemp is a great one (link in my signature).

Are there any programs that you can have run in the backround and display a warning if the temperatures get past a specified amount?

CoreTemp and RealTemp both can monitor the CPU temps. You can set an alarm in RealTemp
