I have Windows 7 Home Premium and it has worked fine for 8 years, with a few hiccups.
But lately it just wont accept these large monthly rollout updates. When I go to Microsofts download site, it states some of these updates arent applicable to my system.. So, why are they downloading..
Anyways, how do I force windows to install, and configure vice daily "you have updates", and they install and then fail, and revert. This has been going on for a week now.

Delete windows update cache using CCleaner or wise disk cleaner, download Simplix Win 7 update https://www.majorgeeks.com/files/details/simplix_updatepack.html
Simplix update might fill in pre-requisiste update so that future update servicing is smooth and has no telemetry updates.

Not all updates are for all system based on the scan. Did you do a Windows Update by default before checking those cumulative updates? I wouldn't use other site updates unless you can verify the problem in Windows 7 first. Otherwise you should take it to a computer shop to have it looked at.

    Simplix UpdatePack 7

It installs all the latest update minus the bad ones (which contain telemetry or force Windows 10 upgrade)

So that mega download install everything needed? What if you have something already, does it skip it?

Yes it will skip existing updates and apply newer hotfixes/patches.

    This

Also, you will need to install the first batch of updates, then it might ask you to reboot, then run it again (it probably will run again on its own upon restart), then install and reboot, until there are no more to be done. This way you have the latest updates which are safe

And we forgot that SP1 is mandatory and simplix pack won't work on pre-SP1.
