Hi, I have been using my computer for about 4-5 months now, downloaded files and installed applications etc... but I still have not created the Factory Default Disc. Will this mean that whatever discs I burn now include all the programs and files I have right now? Should I restore it to factory then burn the discs? Is it possible to burn the discs without all the bloatware on them?

You can still burn the factory DVD's now
You will get 2 DVD's. 2 restore the C drive to an OEM activated windows state, the last one installs the Drivers and applications specific to Acer.
If instead of letting the last DVD AutoRun you just browse it you can install only what you need.
If you want to be a little more adventurous get a disk imaging program like Paragon HDM or backup and restore. That will take an image of your entire disk and all applications etc 'as is that day' and support complete restore to 'today's state' or onto a replacement HDD. It is still worth burning the recovery disks though as for example the Acer DVD player program is not otherwise available to download -
It says I need 3 discs for Factory Default Disc and one for the Drivers and Applications disc. So does this mean that the first one will only install the OS without any drivers or applications?

I have never checked but I would assume that the intial (3) disks install a customised version of Windows 7 with only the windows drivers and anything totally essential to booting (cant think of much )
Then the last DVD installs the drivers from one directory and the applications from another. You need to install everything in Drivers then update with windows update and grab the latest video drivers etc from the web.
Applications probably only needs Acer acade, Acer Launch manager, Webcam app and the Acer HD sound application (may be in the Driver already done)
