With desktops when the time that the computer keeps needs to be reset, as it is lost, an indication of the CMOS battery needing replacement. Is that the same for laptops?

Yes- if the time is incorrect it probably is CMOS-battery related.
Even if it's not the case such a battery is inexpensive it's worth a try.
Furthermore Ferrari 3400 is rather old so CMOS battery has every right to be dying after quite a few years of service. -
Are CMOS for laptops manufacture and model specific, or generic? Where to purchase one and where can I get instructions (not just written but visuals as well) on replacing one?

They are normally just Lithium coin cells (as in watches etc) and the number e.g. 2016 means 20mm diameter and 1.6mm thickness.
You would need to get a service manual for the laptop for exact dissasembly instructions... they all vary in detail. -
Batteries are all the same but connecors may not be so better to be sure that it's the proper one before buying.
Instructions both written and visual are available in Acer Service Guide. -
Unfortunately, some Acer laptops need total disassembly only to replace that 1 USD battery cell
