Aside from Newegg and Best Buy does any place stock it? Any decent deals? Why are the reviews saying that it comes with the 2700u but the only ones I see in stock have the 2500u? How good is the Linux support?

The reviews will say one thing, but manufacturers and retailers will paint a completely different story.
AMD still has pretty low mobile market share, and this is probably why we can only find 2500u models from Acer.
The 2700u is much more expensive (price of which really isn't justified if you ask me) and its possible that OEM's will ship out specific number of units to certain countries and regions. -
2500u and 2700u really only differ in IGP, but the Acer offers a far more powerful dGPU anyways.
It may be a case where the cooler of the Nitro 5 is capable of taking advantage of the marginally higher boost clocks of the 2700u (over the 2500u), but you aren't missing out on tangible performance. -
So, on a certain level there could be some tangible performance increase... however, the 2500u version is cheaper and I think a better course would be to simply upgrade the RAM to low timings 2400MhZ dual-channel (and leave everything else as is).
Given that the 2700u version is frequently several hundred $/£ more expensive (the OEM's are overpricing it), I don't think the 2700u version is worth it.
