Is everyone on Windows 10 just letting it update the graphics driver automatically?
I appear to be on 15.200.1062.1004. The latest driver from AMD is 15.7.1......I don't get it.
I'm also having a few problems where I walk away from my computer, come back an hour or so later and its still "on" but the screen is black and I can't wake it up. Seems to be a problem affecting quite a few people but not tied down to AMD specifically.

How do you even take manual control of updating graphics cards in windows 10?

I was going to jump on the Windows 10 bandwagon but was put off by bad feedback all over the web and here!

Holding off for now. How do you find it? Is it as invasive and controlling as I am led to believe?

Yeh overall I like windows 10 and it boots to desktop in an insanely fast time! It is slightly invasive but to be fair you can turn a lot of stuff off.
I think I've managed to turn off automatic driver installation and I manually loaded 15.8 beta now so lets see if it sticks.
I would recommend it because its a clean interface, its very responsive and fast and games do seem a bit smoother on it.
I wouldn't blame you for waiting a bit longer though. Still a fair few bugs.
